Peanut butter and Protein Cookie Recipe
If you are going to eat sugary foods you might as well bake your own and monitor the ingredients. I personally think homemade goodies taste way better than store bought or restaurant style.
1 – 1/2 c peanut butter (or almond butter, cashew butter etc)
1c splenda granular
2 scoops of protein (any kind- I think vanilla works best) you can get a pure protein for baking at a health food store from one of the clear bins
1 tbsp olive oil or macadamia nut oil
1 whole egg and 1 egg white
1 tbsp vanilla extract
Preheat oven to 325.
In a bowl mix all the ingredients and bake for 8 minutes. Check after 8 minutes and bake longer if needed. These cookies bake fast. Make 16 cookies
Thanks to http://www.nicolewilkins.com for this recipe. Make sure to check out her site for more recipes. I took these cookie and no one knew they were healthy or had protein – huge success.

Hey Kathleen!
Do you use all natural PB or reg?

I use Natural all the time… if there is more then salt and peanuts it is not considered natural.

There are many more healthier options than Splenda!!! Even organic sugar would be healthier. How about date sugar, Sucanat or raw agave nectar? Much better options!
