When I decide to have cheat meals I enjoy baking my own. Baking homemade goodies allows me to control what ingredients are used and the quality of ingredients used.
Here is an amazing carrot cake recipe. Even people who do not care for carrot cake have enjoyed this recipe. This recipe will leave people talking weeks after trying.
Ingredients:
4 Eggs Whites
1-1/2 cups Macadamia Nut Oil
2 cups Sugar
1 cup of Wheat flour
1 cup of Oatmeal flour
1 tsp Salt
2 tsp Baking Soda
3 heaping cups Grated Carrots
1-1/2 cups Coarsely Chopped Pecans
2 tsp Vanilla Extract
8 oz of fresh pureed Pineapple
1 tsp Cinnamon
1-1/2 cup raisins
Directions:
Heat oven to 350ºF. Beat eggs & oil with mixer. Gradually add sugar. In a separate bowl, sift flour, salt, soda, and cinnamon. Combine the egg mixture with the flour mixture. Mix for 1 or 2 minutes. Stir in carrots, pecans, vanilla, and pineapple. Mix until blended. Bake in a greased and floured 9 by 13-inch pan for 50 to 55 minutes. Cool.
10-12 servings
Prep Time: 15 min.
Cook Time: 55 min.

Do you frost this with anything or serve alone?

I frost with a homemade recipe but either way will be great! You can get creative with the toppings too!
